Vanilla cupcakes: my go to recipe.

I decided to decorate mine with fudge squares and chocolate sprinkles

Vanilla cupcakes are always a sure family favourite, and an easy treat to create if you’re in the baking mood, need to make something for a kid’s party, or have guests coming over.

This is my go to, easy recipe:


  • 175g soft butter, cut into large pieces
  • 175g self-raising flour
  • 175g caster sugar
  •  3 eggs
  • ½ tsp baking powder
  • ½ tsp vanilla extract

For the cake icing:

  • 175g soft butter, cut into large pieces again
  • ½ tsp vanilla extract
  • 2-3 tbsp of your preferred milk
  • 350g icing sugar

  1.  Preheat the oven to 180C/gas mark 4. This recipe is to make 12 cupcakes, so line a muffin tin suitable for the amount.
  2. Place all the cake ingredients into a large bowl and beat with a wooden spoon/electric hand whisk until the mixture is smooth and evenly mixed.      3) Divide the mixture evenly between the paper cases in the baking tray.
  3. Bake for 20-25 minutes, or until the cakes are well risen and golden-brown on top. After a few minutes, transfer to a wire rack to cool.

For the icing:

  1. Combine the butter, vanilla extract, two tablespoons of milk, and half the amount of icing sugar in a large bowl and beat until it is creamy and smooth.
  2. Beat in the remaining icing sugar gradually, and pour in the rest of the milk gradually also if needed to make the icing the right consistency.
  3. Once the cakes are cool, apply the icing on to the cupcakes as you like, whether with a piping bag or a knife, and decorate as you please.
